For the 30 to 90 minute brining process, room temp under 75°F is fine. Anything longer than 2 hours, move it to the fridge. Once brined, refrigerate — do not refreeze. Use within 4 days for best scent retention, or 7 if you wrap it tight with paper towel on a freezer pack.
